Caribbean – Cooking Together
A journey around the sunny islands of the Caribbean as we cook together!
Cooking together events are a fresh take on dining out, along with our chef, your friend or partner prepare and enjoy a three course meal in the company of others. This recipe was the starter at one of our cooking together evenings.
Baked yam, corn and cheese – Jamaica
Ingredients – makes 4 large portions or 8/10 starter size
1.8kg/yellow or white yam
1 corn cob or tinned sweet corn
1 red pepper deseeded and cut into rings
1 green pepper deseeded and cut into rings
1 medium onion chopped
250 grams of unsalted butter
110 grams of cheddar cheese
Pinch of paprika, smoky is great
Salt to taste
Method
1/ Peel and dice the yam, then boil in salted water until soft. Drain and mash with butter.
2/ Cook the corn or drain the sweetcorn from the tin. Mix cooked sweetcorn with yam.
3/ Soften the onion and peppers in butter – save a few uncooked pepper rings for garnish.
4/ Butter an oven proof dish and spread the yam mixture now top with cheese and a few pepper slices.
5/ Bake in a hot oven 180 degrees until golden brown
Serve with rice or a nice green salad for a starter
