Oily fish (trout or mackeral – one per guest) – learn to fillet, stuff and tie before cooking;
White Fish (Bream or Dorade or Snapper – work in twos) – cook en papillotte ;
Flat Fish (sole, plaice) – filletting, sauces and different cooking styles
