Jason’s Bang Bang Chicken (or Cod)

A dish that’s sold now on most street food menus, tangy & fresh with a little heat…perfect Here’s Jason’s version – quick starter or main, you can use Chicken, Cod or Tofu

Serves 4

Ingredients

2 chicken breasts, poached with kaffir lime leaves and a little coconut milk (poach for 6 minutes)

100 grams of carrot -spring onions -cucumber -cut into thin strips (julienne)

1 tablespoon of soya sauce

1 tablespoon chilli sauce

2 tablespoons of smooth peanut butter

1 tablespoon of water and nam pla

2 fresh limes -1 in quarters -1 juiced and zest kept

1 red chilli seeded cut into thin rings

A handful of fresh coriander chopped rough

A handful of beansprouts

A handful of rough chopped peanuts

1 teaspoon sweet rice vinegar

Method

Slice the poached chicken

Mix the peanut butter, lime juice, water, soya, nam pla, chilli sauce

Heat in a small pan stir

Mix the carrot, cucumber and spring onion

Season with a little sweet vinegar

Assemble

On 4 plates, place a handful of carrot, onion and cucumber

Top with sliced chicken

Spoon over sauce Dress with remaining ingredients serve

Note fish or tofu can be substituted for chicken
