Tomato, Red Onion and Balsamic Salsa

This quick and simple salsa is perfect as a side dish. What’s not to like?


Ingredients – Serves 4

  • 500g ripen tomatoes
  • 1 clove of garlic, crushed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic
  • 1 lemon, zest and juice
  • 1 small red onion, diced
  • ¼ cup chopped parsley
  • ¼ cup chopped mint


  1. Place oil, garlic and vinegar in a bowl.
  2. Add tomatoes, onion and parsley. Season with salt and pepper and stir to combine.
  3. Stand for at least 10 minutes.
