Curtido Salad

Ingredients

  • 1/16 White cabbage 3 leaves, shredded
  • 1 Red onion sliced
  • 1 Carrot peeled and grated
  • 3 Pickled jalapenos chopped
  • 1 tbsp Rice wine vinegar
  • 5 g Fresh Coriander 1 tbsp, chopped
  • 5 g Fresh Chives 1 tbsp, chopped
  • Sea salt to taste
  • 1/2 tsp Granulated sugar to taste

Method

  • Place the shredded cabbage in a bowl, add a pinch of salt, sugar and vinegar and massage the cabbage until softened.
  • Add the onion, carrot, jalapeños and herbs and combine well.
  • Refrigerate until needed.
