Preheat the oven to 200°C.
Combine the Plain flour, Sugar, Sea salt and Rosemary in a mixing bowl.
Add the Water and Olive oil and mix until a rough dough forms.
Knead the dough for 2–3 minutes until smooth.
Roll the dough out to approximately 3 mm thick (about the thickness of a £1 coin).
Line a baking tray with greaseproof paper and lightly dust with Plain flour.
Transfer the dough to the tray and cut into the desired cracker shapes using a knife or pastry cutter.
Lightly brush the surface with Water and sprinkle with a little Sea salt.
Prick each cracker with a fork to prevent excessive rising.
Bake for 12–15 minutes until lightly golden and crisp.
Transfer to a wire rack and allow to cool completely before serving.
