Amazuan Sauce

Amazuan is a Japanese sweet-and-sour glaze.

Ingredients

  • 1 Banana Shallot
  • 2 clove Garlic minced or grated
  • 8 g Fresh ginger 1 tbsp, grated
  • ¼ Pineapple diced
  • 1 tsp Dark muscovado sugar
  • 1 tsp Rice vinegar
  • 1 Red chilli chopped
  • 2 tbsp Banana ketchup regular if you can't get banana
  • 1 tbsp Soy sauce
  • 1 tbsp Teriyaki sauce
  • 1 tbsp Vegetable oil for cooking
  • Sea salt to taste

Method

  • Get a pan on a medium-high heat with the oil.
  • Sauté the onion, garlic, and ginger until translucent, about five minmutes.
  • Add the remaining ingredients and bring to simmer. Cook for 10 minutes on a low heat until thickened.
  • Serve with glazed pork and udon noodles.
