Amazuan Sauce
Amazuan is a Japanese sweet-and-sour glaze.

- 1 Banana Shallot
- 2 clove Garlic minced or grated
- 8 g Fresh ginger 1 tbsp, grated
- ¼ Pineapple diced
- 1 tsp Dark muscovado sugar
- 1 tsp Rice vinegar
- 1 Red chilli chopped
- 2 tbsp Banana ketchup regular if you can't get banana
- 1 tbsp Soy sauce
- 1 tbsp Teriyaki sauce
- 1 tbsp Vegetable oil for cooking
- Sea salt to taste
Get a pan on a medium-high heat with the oil.
Sauté the onion, garlic, and ginger until translucent, about five minmutes.
Add the remaining ingredients and bring to simmer. Cook for 10 minutes on a low heat until thickened.
Serve with glazed pork and udon noodles.
