Trim away any silverskin (the silvery membrane of connective tissue) from the outside of the pork fillet.
Place all the other ingredients into a bowl, mix well and then massage into the pork. Let it marinade for at least an hour, ideally overnight. Remove from the fridge at least 30 minutes before cooking.
Heat your oven to 180 degrees C.
Place a non-stick frying pan on high heat.
Fry on both sides until browned and sticky.
transfer to an overn tray and cook for 12-15 minutes.
Remove from the oven, rest for 3-5 minutes.
Slice the pork and glaze with Amazuan sauce.
