Stir-Fried Udon Noodles

Ingredients

  • 2 tbsp Vegetable oil for frying
  • 6 g Fresh ginger 1 tbsp, grated
  • 2 clove Garlic minced or grated
  • 80 g Tender stem broccoli
  • 1 Red onion sliced
  • 1 Red pepper sliced
  • 2 Udon noodles ready to cook
  • 3 tbsp Soy sauce
  • 1 Lime zest and juice
  • 10 g Fresh Coriander 2 tbsp, chopped

Method

  • Place a pan on high heat with the oil.
  • Once hot, add the garlic and ginger. Fry for thirty seconds before adding the brocoli.
  • Once the broccoli is softened, add the onion and pepper and fry for another minute or two, until everything is softened and a little charred.
  • Add the ready to cook udon noodles. Keep everything moving until the noodles have separated.
  • Splash in the soy sauce and a squeeze of lime juice.
  • Toss together and finish with chopped coriander.
