Place a pan on high heat with the oil.
Once hot, add the garlic and ginger. Fry for thirty seconds before adding the brocoli.
Once the broccoli is softened, add the onion and pepper and fry for another minute or two, until everything is softened and a little charred.
Add the ready to cook udon noodles. Keep everything moving until the noodles have separated.
Splash in the soy sauce and a squeeze of lime juice.
Toss together and finish with chopped coriander.
