Spices are at the heart of Indian Cookery. They can be earthy, spicy, warming, sweet or floral. They can add colour and flavour on their own, and be combined to create delicious flavours. Some people know exactly how to do this, but if you need a little extra confidence, then this is the class for you. Learn the art of Southern Indian Cookery based around vegetables, rice, lentils and stews – Let’s dig into some of our favorite dishes from the southern Indian states of Kerala and Tamil Nadu.
At Food Sorcery we are lucky to work with Jason Palin who has cooked in more that 40 countries around the world, his tales of cooking & selling chapati on the beach in Southern Indian are priceless.

Examples of what you might cook:
- Dosa – a thin, large pancake
- Thali – little meals in one. The idea: salty, sweet, sour and bitter merge in the mouth in one sitting.
- Kozhikode Biryani
- Tindori thoran with cashew nuts
What’s included:
Glass of prosecco, beer or soft drink on arrival. Enjoy the food you create throughout the class and any leftovers can be taken home if you bring suitable containers. Food Sorcery can’t take responsibility for any food taken away from the cookery school.

Nina is best described as a spice geek, or more poetically the spice sommelier, we have joined forces to bring you a cookery class, specialising in blending spices – techniques, how to, working with different flavours, tasting and identifying. You will do hands-on spice mixing, taking 2 blends home – Nina will use the spices she mixes to make you all a meal to enjoy during the class
Skills you will Learn:
How to pick which spices and how to blend
How the class will run:
With a drink on arrival, Nina will then show and talk about different spices, how to identify them and which flavours work together.
She will demonstrate and spice blend, and use this to cook a delicious meal for the group
Guests will then make their first spice blend
A second demo will follow before guests make a second blend
Together make an Indian Slaw
Meal to share
What’s included:
Glass of fizz, beer or soft drink on arrival, all the spices you need to make 2 blends to take home, the meal that Nina cooks to share

Join us for a fun and informative evening of demonstration and hands-on cooking, we will look at a variety of different street food which you will eat as you cook and take home any leftovers.
