Combination of hands-on cooking and demonstration, this extended class includes time to enjoy eating your dishes in the dining room. You will leave with plenty of leftovers and the confidence to cook more delicious dishes at home.

- How to cook Sushi rice
- Knife skills – Learn to slice fish fillets for maki sushi
- Maki Sushi – Traditional maki is still preferred in Japan, it has nori seaweed on the outside
- Uramaki – An inside out roll, meaning that the sushi rice is on the outside
- Temaki – Individually rolled corn-shaped sushi with fillings such as raw salmon with avocado
- Onigiri – Not strictly sushi, triangular shaped they are a meal in themselves.

During the harsh Hokkaidō winters, this ritual of bulk cooking became a cherished tradition. Years later, Midori found solace in recreating these flavours, she brings her soulful recipes to Manchester, full circle from her Otaru roots.

You will learn how to make popular types of sushi such as makizushi – rice and filling wrapped in nori, uramaki – rice is on the outside such as California rolls, and sashimi – raw fish. All ingredients are bought locally.
The most common type of Gyoza in Japan is Yaki-Gyoza. This style of Gyoza is very similar to the Chinese ‘potsticker’ dumplings. The prepared dumplings are placed in a pan and fried for a short time, water is then added to the pan and a lid placed on top, to steam the dumplings. When the steaming process is complete, the lid of the pan is removed and the Gyoza are left to continue to crisp.

You will learn how to make popular types of sushi such as makizushi – rice and filling wrapped in nori, uramaki – rice is on the outside such as California rolls, and sashimi – raw fish. All ingredients are bought locally.
The most common type of Gyoza in Japan is Yaki-Gyoza. This style of Gyoza is very similar to the Chinese ‘potsticker’ dumplings. The prepared dumplings are placed in a pan and fried for a short time, water is then added to the pan and a lid placed on top, to steam the dumplings. When the steaming process is complete, the lid of the pan is removed and the Gyoza are left to continue to crisp.

You will learn how to make popular types of sushi such as makizushi – rice and filling wrapped in nori, uramaki – rice is on the outside such as California rolls, and sashimi – raw fish. All ingredients are bought locally.
