Sweet & Sour with Miso Roasted Cauliflower, Chinese Fried Rice
Pineapple Fritters
Ingredients – serves 2
1 whole small Cauliflower or 1/2 large 1 tablespoon Miso paste/ stock 1 Red Pepper 1 Carrot 2 Spring Onion 1 Red Chilli Handful Fresh Coriander 1 large or 2 Small Cans Pineapple Rings 2 Tablespoon Tomato Ketchup 1 banana shallot 3 tablespoon cornflour
| 1 Thumb Sized Piece of Ginger 2 cloves Garlic Tablespoon Olive Oil 2 Tablespoon Soy Sauce 150g Basmati Rice (75g per person) 1 x star anise Approx. 200 ml water 2 teaspoons salt Oil to fry fritters (enough for 2mm in pan)
To serve with the fritters – vanilla ice cream; garnish with fresh mint or fine diced red chilli
