Sensational Scones – Recipes

Our cookery classes are as much about learning to cook as they are a sociable experience. We hope you enjoyed your day and are ready to recreate the bakes at home.

You Cooked:

  • Chocolate Chip Scones
  • Cheese Scones 

Scones are a lightly sweetened cake made from flour, fat, eggs, milk and sometimes have added fruit, chocolate, sultanas or cheese. They are very versatile and can be served “sweet” with the addition of clotted or whipped cream and Jam. Alternatively they can be served as a savoury item with the addition of cheese and as an accompaniment to a main meal. Or if you prefer, just spread them butter and eat them warm from the oven.

We have given you our “Basic Recipe” once you are confident that you can make scones and understand how the recipe works, play around and experiment with different flavours.

Sultana Scones

Ingredients:

  • – 1lb or 450g Plain Flour
  • – 1oz or 25g Baking Powder
  • – ½ oz or 13g Milk Powder
  • – 3oz or 75g Shortening
  • – 3oz or 75g Egg
  • – 4oz or 100g Sugar
  • – 8oz or 200g Milk
  • – 4oz or 100g Sultanas

Method:

  1. Place the dry ingredients and shortening in a bowl and mix until it resembles breadcrumbs.
  2.  
  3. Dissolve the sugar in the egg and add the milk, mix together.
  4.  
  5. Pour liquid mix onto dry mix and gently combine together. Do not overmix.
  6.  
  7. Add the sultanas and gently knead together.
  8.  
  9. Roll out on a floured surface and then cut and egg wash.
  10.  
  11. Allow to rest for 10 mins.
  12.  
  13. Bake at 180’c  until golden. (approx 12 mins)

Chocolate Chip Scones

Ingredients:

  • – 1lb or 450g Plain Flour
  • – 1oz or 25g Baking Powder
  • – ½ oz or 13g Milk Powder
  • – 3oz or 75g Shortening
  • – 3oz or 75g Egg
  • – 4oz or 100g Sugar
  • – 8oz or 200g Milk
  • – 4oz or 100g Chocolate Chips

Method:

  9. Roll out on a floured surface and then cut and egg wash.

  11. Allow to rest for 10 mins.

  13. Bake at 180’c  until golden. (approx 12 mins)

Cheese Scones

Ingredients:

  • – 1lb or 450g Plain Flour
  • – 1oz or 25g Baking Powder
  • – ½ oz or 13g Milk Powder
  • – 3oz or 75g Shortening
  • – 3oz or 75g Egg
  • – 2oz or 50g Sugar
  • – 8oz or 200g Milk
  • – 4oz or 100g Cheese

Method:

  1. Place the dry ingredients and shortening in a bowl and mix until it resembles breadcrumbs.
  2.  
  3. Dissolve the sugar in the egg and add the milk, mix together.
  4.  
  5. Pour liquid mix onto dry mix and gently combine together. Do not overmix.
  6.  
  7. Add the cheese (reserve small amount to sprinkle on top) and gently knead together.
  8.  
  9. Roll out on a floured surface and then cut and egg wash.
  10.  
  11. Allow to rest for 10 mins bake at 180’c until golden. (approx 12 mins)
