Buckwheat “Rice”Pudding with Lime, Coconut and Turmeric Vegan Recipe

Created by Chef Jan Cron for our vegan cookery class – it packs a full flavour punch with plenty of good for your ingredients. Jan is a chef with over 12 years of experience in prestigious establishments including 5* hotels and fine dining restaurants in Manchester and around the world. He is an accomplished personal chef, his attitude to food is that it should be as delicious as it is good for you.

Ingredients – Serves 4

  • 1 cup of buckwheat, rinsed
  • 1 can of coconut milk
  • 4 dates, chopped
  • 1 tsp of chia seeds
  • 1 apple, grated
  • 1tsp of cinnamon
  • 1tsp of turmeric
  • 1 lime, juice and zest
  • 2tbsp of coconut chips
  • 2tbsp of golden sultanas

Method

  1. Add all the ingredients, instead of the last two, in a small sauce pan and simmer 20 minutes or until buckwheat is tender. Pour in a glass while still warm, garnish with toasted coconut chips and golden sultanas and chill for at least an hour. Serve with scoop of coconut cream on a top.
